Conch Souse

Ingredients:

-celery
2 limes
-parsley
1 cucumber
-sweet Pepper
2 pounds of conch
1 medium Onion medium
-hot pepper and
-salt to taste

Directions:

First use the salt with the lime
to clean away the slime from the
conch.

In order to make the conch tender
pound very well. Next boil conch
until tender.

Prepare the pickle using cucumber
including the onion and the other
seasoning. Cool the conch and cut
into small pieces.

Finally Stuff the conch pieces in
the pickle and serve with parsley
as a decoration.

Stuffed Cucumbers

Ingredients:

1 Cucumber

Note: Wash the cucumbers. Cut ends off
and scoop out all the seeds.

Filling 1:

1 chopped hard boiled egg
2 ounces of ham (chopped)
2 tablespoons of mayonnaise
? teaspoon onion (grated)
-pepper

Method 1: Mix the egg, ham pepper,onion and mayonnaise
and blend well the stuff cucumber. Next wrap
and chill in the frige. When ready to serve,
slice and garnish.

Filling 2:

2 ounces of sour cream or
4 ounces of cream cheese
2 ounces of cheddar cheese
? teaspoon onion (grated)
1/8 teaspoon of white pepper

Method 2: Mash the cream cheese, add the grated cheddar
and continue mixing. Next add onion and white
pepper then mix well. Next stuff the cucumber
wrap then chill. To serve, the cucumber slice
and garnish.

Honey-Baked Plantain Rolls

Ingredients:

? cup honey or syrup
6 plantains (just ripe)
2 tablespoons of margarine
2 tablespoons lemon or lime juice

Method:

Preheat the oven to 325 degrees F. Wash and
boil the plantains in their skins. Peel and
cut into lengthwise strips ( about 5 strips
to 1 plantain ).

Next roll each strip lengthwise. If necessary
fasten with a toothpick. Arrange in a greased
baking dish.

Next melt the fat, add the lime juice then mix
well with honey, generously brush the plantain
rolls.

Bake for about 15 to 20 minutes until golden
brown. After the first 10 minutes brush with
the remainder of the liquid.

Note: The Honey Baked Plantain Rolls is a great
party favour. Add a small sausage in each strip
of plantain. Yum! Enjoy!

Dumplings

Ingredients:

-1/2 pound of flour
1 tablespoon of sugar
-1/2 teaspoon of baking powder
-3/4 teaspoon of salt to taste
-a pinch of spice or nutmeg
-(optional)
-1/4 cup of cornmeal (optional)
-water

Directions:

Blend together the salt, cornmeal,
flour, baking powder including the
the sugar.

In order to make a stiff dough be
sure to add enough of water.

Form the dough into flat bite size
pieces or make it into a oblong or
round shape.

Add dough by dumping it in the hot
boiling soup. Enjoy!
