Pumpkin Soup

Ingredients:

1 cup of milk
2 cups of water
1/2 teaspoon of thyme
2 tablespoons of flour
1 pound of diced pumpkin
1/4 cup of diced carrots
1 tablespoon of margarine
3 rashers bacon (chopped)
-salt and pepper to taste
2 tablespoons of
-chopped onions

Directions:

Cook the onion, carrot and bacon
in margarine for about 5 minutes.
Add flour and blend.

Now Gradually add water, followed
by pumpkin, thyme, salt & pepper.

Next cover and simmer for 1 hour.
Blend and whisk together. Before
serving, add in the milk and heat
to boiling. Serve hot.

Coconut Bread

Ingredients:

1 egg
-nutmeg
-cinnamon
? cup raisins
1 coconut grated
1 pound of flour
6 ounces of sugar
4 teaspoons of baking powder
2 teaspoons of vanilla essence
? cup milk or milk and coconut water
4 ounces of margarine or shortening

Directions:

Sift together the dry ingredients. Add melted
margarine, beaten egg and milk. Mix in coconut
and raisins (floured), knead or mix.

Finally, Put in a greased loaf pan and bake in
a moderate oven. Whole wheat flour may be used
in place of white flour.

Dough Boy:

Ingredients:

6 cups of flour
1-1/2 cups of water
1/2 cup of margarine
1/2 teaspoon of salt
1/2 cup of shortening
1/2 teaspoon of nutmeg
1/2 teaspoon of cinnamon
2 cups of grated coconut
1 ? to 2 cups of brown sugar
1 tablespoon of yeast (instant)

METHOD:

Sift together the flour and salt. Now cut
the fat right into the flour mixture. Add
spices and yeast, followed by coconut and
water.

Now knead the mixture and leave to stand
until almost twice its size. Bake at 300
to 350 F. for 1 ? to 2 hours.

Guava Jelly

Ingredients:

Lime juice
Granulated sugar
Firm, slightly under
ripe guavas

Directions:

Wash, cut up fruit roughly, removing the
tops. Cover the fruit with water and now
boil until it has reduced to half.

Strain the fruit through a cloth or a fine
strainer. Note: Do not press just leave to
drip.

Measure the juice with sugar allowing 1 cup
of sugar and ? tsp. lime juice to every cup
of juice.

Stir together until the sugar melts and boil
rapidly. Test by dropping a tbsp full of the
mixture into the cold water.

The guava mixture should come together in a
very soft ball. Pour in a dry, sterile jars
when ready.
