Roast Breadfruit and Saltfish

Ingredients:

1 onion
1 tomato
1/4 cup of oil
1 small cucumber
1/4 cup of water
1 large Breadfruit
1 pound of Saltfish
1 teaspoon of butter

Instructions For Preparation:

Place the Saltfish into a pot and boil
until it is not too salty.

You must strip and clean the Saltfish
into small bite size pieces.

The Onion and tomato can be chopped or
diced.

Next add the Saltfish and a little bit
of the seasoning along with some sliced
cucumbers.

Now heat the hot oil into a frying pan
along with the other ingredients.

Finally, add the Saltfish including the
water and butter let simmer. Serve warm.

Note: Roast Breadfruit must be cooled
off before Slicing.

Stuffed Sweet Potatoes

Ingredients:

1 medium onion
-Vegetable oil
4 rashers of bacon
? cup whole kernel corn
1 tablespoons of margarine
? cup of any cooked diced meat
2 pounds Sweet Potatoes (2 large)
-salt and pepper to taste

Directions:

Scrub potatoes well. Dry & brush with
oil, Transfer the potatoes on a baking
sheet and cook at 400 degrees F. for 1
? hours until done.

Next Fry the bacon along with the onion
until the bacon is crispy and the onion
is transparent.

Remove potatoes from the oven, cut each
into half and scoop out the flesh. Chop
roughly.

Next add the butter and corn, with the
seasoning along with the bacon mixture.
Mix well.

Spoon the mixture back in the potatoe
shells. Reheat into the oven for about
10 to 15 minutes.

Herbs that go well with sweet potatoes
are thyme, parsley, mint and chives.

Stuffed Jacks:

Ingredients:

6 Jacks
-flour for dredging
? teaspoon salt to taste
1 tablespoon juice of a lime
2 tablespoons local seasoning
-farine stuffing

Directions:

First clean the fish then marinate
in the lime and salt. Rub with the
seasoning. Stuff fish with farine
stuffing.

Next Dredge the fish in flour. In
hot oil fry the fish until brown.
garnish withlime.

Farine Stuffing

Ingredients:

1/4 cup of chopped seasoning
-(onion, chive, sweet pepper,
-parsley, thyme, garlic)
1/4 teaspoon of white pepper
1 tablespoon of tomato ketchup
1 tablespoon of margarine
1/2 teaspoon of salt
1/2 cup of farine
1 cup of water

Directions:

First soak the farine with 1 cup of
the water for about 5 minutes. melt
the margarine and the soaked farine
along with the other ingredients.

Now cook for at least 3 minutes. use
the Farine Stuffing for stuffing the
fish or other types of meat.
