Caribbean Jerk Ham Sandwich

Ingredients:

1/2 pound of shaved deli ham
4 poor boy or hoagie buns, split
1 1/2 teaspoons of caribbean jerk seasoning
1 tablespoon of coarsely chopped fresh cilantro
1 cup of crushed pineapple in heavy syrup, drained
4 (1 ounce each) slices LAND O LAKES Deli Muenster
-or American Cheese, cut in half diagonally

Directions:

First combine pineapple, cilantro and the jerk
seasoning in a medium size bowl and the set it
aside.

To assemble sandwiches spread then cut the sides
of the bottom 1/2 of each bun with 2 tablespoons
of pineapple mixture.

Now layer with 1/4 ham, 2 triangles cheese, and
2 pepper rings.. Divide the remaining pineapple
mixture among sandwiches, cover with top 1/2 of
bun.

Makes 4 sandwiches.

Grilled Caribbean Pork Burgers

This delicious burger has all the spiciness of
the Caribbean, yet a pleasant coolnes from the
lime zest.

Remember to grate only green portion of the lime
peel, since the white portion tends to be bitter.

Ingredients:

-hamburger buns
1/4 teaspoon of salt
1 tablespoon of olive oil
1 teaspoon of dried thyme
2 cloves of garlic, minced
1/8 teaspoon of black pepper
1 tablespoon of fresh lime zest
1/2 teaspoon of red pepper, crushed
1 pound of ground pork, preferably lean

Directions:

Preheat the grill for medium heat. Combine pork,
garlic, zest, thyme, salt, red pepper, and black
pepper. Shape into 4 patties, about 1 inch thick.

Next place the patties on the grill and cook for
9 minutes, turn and cook for a remaining 9 to 10
minutes.

For about 3 minutes before the patties are cooked
brush the burger buns with olive oil put the buns
on a heated grill.

Toast lightly and remove. When patties are cooked,
remove from grill and serve on buns with favorite
condiments.

Caribbean crab cakes

Ingredients:

2 teaspoon of honey
1/2 cup of mayonnaise
3 tablespoon of butter
1/4 cup of onion, minced
2 tablespoon of jerk spice
1/2 pounds of lump crabmeat
-sweet lime salsa, to serve
1 cup of fresh bread crumbs
1/4 cup of red pepper, minced

Directions:

Mix together all the ingredients exept
for salsa and butter into a small size
bowl to form twelve crabcakes.

Cook the crabcakes in the butter, over
moderate heat till its golden brown on
both sides. Serve with some sweet lime
salsa or other sauce.

Yield: 12 Servings

Conch Salad:

Ingredients:

-salt for flavor
2 celery ribs, chopped, finely
1 medium onion, chopped, finely
2 green peppers, chopped, finely
2 red hot peppers, chopped, finely
2 firm ripe tomatoes, diced, finely
1/2 cup of fresh lemon or lime juice
1 small cucumber, peeled, diced, finely
3 lbs. of conch, skinned, diced, finely or
-you may use cooked diced lobster instead.

Directions:

First use 2 large size bowls of salt water
and wash the conch thoroughly in the first
bowl.

Now dice the conch finely, put into second
bowl to soak for at least 30 minutes.

Next drain and combine all the ingredients
right into a medium size mixing bowl.

Finally, marinate mixture for 30 min. to 1
hour in the frige and serve chilled on top
of lettuce leaves.

Yields: 8 to 10 Servings
