Brandied Eggnog

Ingredients:

1/4 cup of milk
1/4 cup of brandy
1/4 teaspoon grated nutmeg
5 scoops of french vanilla
-ice cream or eggnog ice cream
2 tablespoons Grand Marnier (orange
-flavored liqueur) (optional)

Directions:

First in a blender, combine the ice cream
together with brandy, milk, Grand Marnier
and 1/8 teaspoon of the nutmeg.

Finally, blend until the mixture is smooth
and frothy. Next pour in four glasses then
sprinkle with the remaining nutmeg.

Rum Cake

Ingredients For Cake:

4 eggs
1/2 cup of cold water
1/2 cup of vegetable oil
1 (18 ounce) box of yellow cake mix
1/2 cup of Bacardi dark rum (80 proof)
1 (3 3/4 ounce) box of jello
-instant vanilla pudding

Ingredients For Glaze:

1/4 cup of water
1/2 cup of butter
1 cup of granulated sugar
1/2 cup of Bacardi dark rum (80 proof)

Directions For Cake:

Heat oven to 325 F. Grease and flour a
12 cup Bundt pan, mix together all the
cake ingredients.

Now use a prepared Bundt pan to pour in
the batter. Bake for about 1 hour, cool
completely. while cake is cooling make
the glaze.

Use a prepared Bundt pan to pour in the
batter. Bake for at least 1 hour, cool
off completely. While cake is cooling
make the glaze.

Directions For Glaze:

In a sauce pan melt the butter. Stir in
the water with the sugar and bring to a
boil for 5 minutes stirring constantly.
Remove from the hot heat and then stir
in the rum.

Next invert cake on a serving plate or
a cake stand. Prick top of cake with a
toothpick to allow glaze to soak in.

Now drizzle and smooth the glaze evenly
on top of the cake and sides. Allow the
cake to absorb the glaze.

Repeat it till all of the glaze is used
up. Note: This will take about several
applications.

Jamaican Christmas Cake

Ingredients:

4 eggs
1 cup of wine
8 ounces of sugar
1 pound of raisins
1/2 teaspoon of salt
4 ounces of cherries
1 teaspoon of vanilla
4 ounces of mixed peel
1 teaspoon of cinnamon
2 tablespoons of browning
1 teaspoon of baking powder
1/2 teaspoon of mixed spice
1/2 pound of prunes (chopped)
6 ounces or 1.5 cup of flour
8 ounces of margarine or butter
-finely grated rind of 1 lime/lemon

METHOD:

Cream butter, sugar and browning till
soft and fluffy. Sieve all of the dry
ingredients together.

Beat eggs, sherry and brandy together.
Add egg mixture to creamed butter and
sugar. Add fruits.

Add the flour and fold in. Do not over
beat while mixing. Bake at 350 degrees
F. for about 1 1/2 hours.

Yield: 9' round cake.

Caribbean Holiday Shrimp

Ingredients:

2 limes, juiced
1 tablespoon of soy sauce
2 cloves of garlic, minced
1/2 teaspoon of white sugar
1 tablespoon of vegetable oil
1/2 cup of chopped fresh cilantro
2 tablespoons of minced fresh ginger root
1/2 teaspoon of crushed red pepper flakes
2 pounds of large cooked shrimp, peeled,
-tails on

Directions:

In a large size bowl combine oil, ginger,
lime juice, garlic, soy sauce, sugar and
red pepper, mix well.

Now stir in the shrimp with the cilantro.
Cover and refrigerate 1 to 4 hours before
serving. Stir occasionally while chilling.
