Caribbean Grouper With Mango, Pear And Avocado Salad
Ingredients:
Salad:
-walnut oil
1 lime juice of
2 oranges juice of
4 mangos 1/4 inch strips
6 red pears 1/4 inch strips
1/2 pound cleaned baby spinach
3 haas avocados 1/4 inch strips
3 pounds of black grouper fillet,
-skin on
Caribbean Seasoning:
2 lemons zest of
1 tablespoon of chipotle
4 1/2 teaspoons of thyme
1 1/2 teaspoon of nutmeg
2 tablespoons of allspice
4 1/2 teaspoons of cinnamon
2 tablespoons of brown sugar
6 tablespoons of dried onion
6 tablespoons of onion, minced
6 tablespoons of garlic, minced
1/2 teaspoon of ground habanero
2 tablespoons of hungarian paprika
Directions:
First prepare a wood or a charcoal grill
and let it burn down to embers. Next rub
on Caribbean seasoning in long strokes.
Let it sit for 15 minutes.
Now grill for about 8 minutes on one side
and 6 minutes on the reverse side. Remove
from the grill and keep it hot.
Lightly oil the fruit with the walnut oil
and grill over hickory wood for 3 minutes.
Finally, place in a bowl with fruit juices
and toss. Serve on top of baby spinach and
avocado. Makes approximately 6 servings.

Smoked chicken and exotic fruits salad
Ingredients:
1 Smoked chicken
3 Spring onions, sliced
1/2 decilitre creme fraiche
2 tablespoons of chilli vinegar
1 Pawpaw skin removed and cubed
1 Mango, skin removed and cubed
1 tablespoon of balsamic vinegar
2 tablespoon of coriander, chopped
1 tablespoon of chilli oil, (see recipe)
1/4 Chilli, seeds removed and finely chopped
2 Plum tomatoes blanched, peeled, seeded and
-diced
Directions:
Remove all of the skin and bones from chicken
and dice. Mix mango, pawpaw, tomatoes, spring
onions, chilli, vinegar with a little bit of
lemon juice.
Now fill a 6cm ring 2cm high with fruit mix.
Add smoked chicken along with creme fraiche.
then mix together. Put a further cm on this.
Mix in the ring. Sprinkle with coriander and
remove the ring and mix with the chilli oil,
balsamic vinegar and drizzle around it.
Yield: 1 servings

Caribbean crabmeat salad with gingered dressing
Ingredients:
-mango slices
-avocado slices
-a pinch of Sugar
-purple onion rings
1 cup of mayonnaise
1/2 teaspoon of salt
8 Plum tomatoes, diced
-mixed gourmet salad greens
1 teaspoon of ground ginger
1 tablespoon of dijon mustard
1 tablespoon of dry white wine
1 pound of fresh lump of crabmeat
1 cup of seedless cucumber, diced
1/2 teaspoon of Old Bay seasoning
1/4 teaspoon of ground white pepper
Directions:
Whisk together mayo, mustard, white
wine, ground ginger, salt, and sugar
and cover then chill.
Combine crabmeat, tomatoes, cucumber,
Old Bay and white peppper in a large.
size bowl.
Finally, Toss with mayonnaise mixture.
Serve with greens on serving a plates.
Garnish, if desired.
Yield: 8 Servings

Caribbean potato salad
Ingredients:
-salt to taste
1 celery rib, sliced
1/4 cup of canola oil
1/3 cup of mango chutney
2 tablespoon of lime juice
1/2 cup of scallions, sliced
2 pounds of red bliss potatoes
2 cup of cherry tomatoes, halved
2 tablespoon of jalape¤o, chopped
2 tablespoon of white wine vinegar
1/2 cup of green bell pepper, sliced
2 cups of papaya or cantaloupe, cubed
Directions:
TROPICAL DRESSING: Put potatoes in large
saucepan with enough salted cold water to
cover. Boil till tender when pierced with
a fork for about 30 minutes.
Drain the potatoes when it is cool enough
to handle cube potatoes then combine with
dressing ingredinets.
To make dressing: combine all the dressing
ingredients in a small size bowl. pour over
vegetables and toss to coat.
Finally serve immediately or refrigerate in
an airtight container for at least up to 3
days.
Yield: 8 servings
