Jerk Pork

Ingredients:

Jerk Sauce - Buy Now or Make your own
5 lb Pork Shoulder (cut up) Pimento
(all spice) branches or aromatic
wood

METHOD:

Rub the meat with the sauce. If using a
pork shoulder, make shallow cuts and rub
in.

Now marinate over night. Grill at lowest
possible setting over a low fire until
done.

Pimento (all spice) branches (this is what
is used in Jamaica) mixed with charcoal is
best.

If not try to use an aromatic wood in the
barbecue grill to enhance the flavor.

Finally, chop meat into pieces, and serve
traditionally with hard-dough bread.

Hot Wings Jerk Sauce

Ingredients:

1/2 cup of water
1 stick of butter
1/4 cup of jerk sauce
2 tablespoon of wirefire
-sauce

METHOD:

First melt the butter and mix
together the water and sauce
to a paste.

Finally, add the butter along
with the jerk paste, mix then
serve immediately.

Pickled Hot Peppers

Ingredients:

-salt to taste
2 ounces of sugar
1 teaspoon of rum
-1/2 pound of carrots
-1/2 pound of cho-cho
-1/2 pound of hot peppers
-(large ones cut into
-small pieces and small
-ones used whole)
6 grains of pimento
2 cups of white vinegar
2 tablespoons chopped onion

METHOD:

Cut the peppers into pieces, leave the
bird peppers whole, removing the stems.

Put vinegar, salt, sugar and onion in
a saucepan then add peppers.

Bring to a boil and simmer for about 5
minutes. Cool off, add rum, place into
sterilized jars.

cover and allow to steep for a few days
before using.

Easter Bun

Ingredients:

2 eggs beaten
3 cups of flour
1/2 pint of milk
3/4 cup of brown sugar
1 tablespoon of browning
3 teaspoons baking powder
-tablespoon melted margarine
-raisins and mixed peel
-(amount based on your taste)
1 tablespoon mixed spice
1 tablespoon cinnamon
1 tablespoon nutmeg

METHOD:

Measure all ingredients in a bowl and mix
well. Pour in the bun shaped baking pans.

Bake in a moderate oven at 350 degrees F.
until done well. Glaze with the sugar and
water or pancake syrup and serve.
