Papaya Garlic Shrimp

Ingredients:

1/2 onion, chopped
3 tablespoons of butter
2 cloves of garlic (minced)
-half a medium papaya, chopped
-into 1/2" chunks -( you can use a
-bit more or less if you desire )
1 teaspoon of dried thyme or 1 sprig fresh
1 lb. of medium shrimp, shelled and deveined
-(may leave tail portion on)

Directions:

In a sauce pan, melt the butter. Sauté the garlic
along with the onion.

Once sautéd, add the papaya and thyme, stir until
the papaya just begins to get mushy.

Now pour mixture in a bowl and sauté shrimp in the
same sauce pan along with a little more butter for
a couple of minutes.

Add papaya, with the garlic with the onion mixture
back in for about another 5 minutes on the low heat
until the shrimp is cooked.

Finally, you may serve this dish over rice or with
any type of noodles.

Shrimp In Tomato Sauce

Ingredients:

1 pound of shrimp
1 tomatoe, sliced
2 tablespoon of oil
1 tablespoon of rum
1/2 teaspoon of salt
1/2 teaspoon of pepper
2 cloves of garlic, minced
1/2 cup of tomatoe ketchup
2 stalks of scallions, chopped
1 tablespoon of superior soy sauce
1 small onion, and sweet pepper, sliced

METHOD:

Clean the shrimp, remove the head, leaving
shell on. Wash and pat dry. Heat pan. Note:
can use a wok or afrying pan.

Add oil, shrimp, garlic, soy sauce ketchup
rum and salt and pepper, stir fry for 1 to
2 minutes. Add the onion, scallions, sweet
pepper and tomatoe.

Stir fry about 1 to 2 minutes again until
shrimp turn pink. Remove to serving plate
and garnish with chopped scallion tops.

Cow Foot

Ingredients:

8 pimentos
2 sprig of thyme
2 onions chopped
1 1/2 cup of water
2 pounds of cow foot
1 can of butter beans
2 peg of garlic crushed
-salt and pepper to taste
5 cup of flour water to mix
1 whole scotch bonnet pepper for
-taste (should have the stem)

Instructions For Preparation:

Season the Cow foot with the pimento, onion,
crushed garlic, pepper & salt. Cook the cow
foot in 1 1/2 cup o water until its tender.

Add butter beans with thyme along with salt
and pepper if necessary for taste.

Cook for approx. 8 minutes then add a whole
Scotch bonnet pepper and cook for approx. 2
minutes.

Serves: 4 People

Tripe and Beans

Ingredients:

1 pound of tripe
1 sprig of thyme
6 pimento grains
-one can of baked
1 chopped onion beans
1/2 teaspoon of salt
2 stalks of scallions
1 ounce of margarine,
2 teaspoon of black pepper
5 cup of flour water to mix
1 tablespoon of flour Spinners

METHOD:

Cut the tripe in 1 inch pieces. Add tripe to
the water with 1/2 the season and cook until
tender.

Make spinner (small dumplings) & add Add the
rest of the seasoning with the margarine and
cook for 10 minutes.

Mix a tablespoon flour with .25 cup of water
until its smooth. Add and cool for 5 minutes.
