Rock Bun

Ingredients:

1 large egg
8 ounces of flour
3 ounces of butter
4.5 ounces of sugar
4 ounces of raisins
3 ounces of butter
1 teaspoon vanilla,
-nutmeg and cinammon
1 teaspoon of baking
-powder

METHOD:

First combine together the butter and
sugar. Add the beaten egg and vanilla.

Now stir into flour with baking powder
along with the raisins and the spices.

Next roll into buns. Bake in a heated
oven at 350 degrees F. until its done.

Yellow Yam Rissoles

Ingredients:

2 eggs
-parsley
1 pound yellow yam
-1/2 pint cooking oil
4 ounces bread crumbs
-black pepper to taste
1 teaspoon Lemon Juice
1 pound cooked chicken
-pinch of salt to taste
-1/2 teaspoon minced garlic

METHOD:

Sautee the chicken. Boil the yam until its
soft. Mince the cooked chicken finely then
crush into boiled yam.

Combine chicken mixture, 2 oz bread crumbs,
seasoning, lemon juice and 1 egg. Beat well
until smooth and stiff.

Divide mixture into equal portions and make
into a sausage shape. Beat the egg. Dip the
mixture into the egg and then the remaining
bread crumbs.

Next fry in the cooking oil until its brown.
Finally, garnish with the parsley. Enjoy!

Southern Fried Jerk Chicken

Ingredients:

8 Drumsticks
1 cup Buttermilk
-1/2 cup cornstarch
2 tablespoons salt
1 tablespoon Paprika
1 cup yellow Cornmeal
1 Cup all Purpose Flour
-1/2 cup Dry Jerk Seasoning
2 tablespoons black pepper
-Red Stripe Beer (use as needed)
-Vegetable or Peanut Oil for frying

Directions:

Combine the Red Stripe Beer and Cup Buttermilk
in a large glass bowl. Add Chicken to the bowl
and marinate in the refrigerator for 2 hours.

Combine the flour together with the cornmeal,
jerk seasoning, cornstarch, paprika, salt and
pepper into a bowl. Mix to combine. Drain off
chicken and discard the marinade.

Toss the Chicken lightly one at a time to coat
them. You can use a zip lock bag with breading
mixture to do this.

Place the breaded chicken onto a large baking
sheet lined with waxpaper. Be sure they do not
touch each other. Place in refrigerator for 30
minutes.

Pour oil in 2-3 inch deep skillet. Heat oil to
355 degrees F. (check with frying thermometer).
Add the chicken 2 at a time.

Fry each for at least 4 minutes on each side or
till they are golden brown Remove each piece of
chicken and place on paper towel to drain oil.

Transfer to an oven safe platter once the oil is
drained. Put in an oven set at 200 degrees F. to
keep warm. Once all of the chicken is cooked, it
is best to serve immediately.

Curry Chicken

Ingredients:

-salt to taste
-one 3 lbs of chicken
2 tablespoon curry powder
-onion, thyme, garlic,
-pepper, black pepper.
-lemon or lime juice

METHOD:

Clean, skin,and cut chicken in small
pieces,then wash with lime or lemon
juice.

Drain, and season with curry, onion,
thyme, garlic, peppers, salt and let
marinate for awhile.

In a skillet pour about 3 tablespoon
of oil. Let oil heat but not too hot.
Add the chicken and let it cook until
its done.

Serve over white rice.
