Ackee, Callaloo and Rice Casserole

Ingredients:

1 beaten egg
1/2 cup of milk
1 teaspoon paprika
2 cups of Grace Rice
1/2 cup of chopped onion
2 teaspoons. pepper (white)
1 cup of grated cheddar cheese
2 tablespoons GRACE Vegetable oil
1 can GRACE ACKEES in salted water
1 can of GRACE CALLALOO in salted water

Directions:

First preheat the oven to 375 degrees F.
Cook Grace Rice. and set aside a greased
casserole dish.

In a frying pan heat the Grace Vegetable
Oil and saute the chopped onions. add the
drained Grace Ackees and the white pepper
then set aside.

At the bottom of a greased casserole dish
spread 1 layer of cooked rice and a layer
of Grace Ackees and Callaloo alternately.
Cover remaining rice.

Combine the beaten egg along with the milk
and pour over rice. Top the casserole with
paprika and sprinkle on the cheese.

bake until done or a skewer inserted comes
out clean.

Roti

Ingredients:

1 cup of wheat flour
2 tablespoons of oil
Salt and enough water
-to make dough

Instructions For Preparation:

Knead the wheat flour, salt and water to
make dough. Let the dough stand for half
hour.

Take a small portions, knead again, dust
with the flour and roll out into a round
shape.

Cook in (flat) griddle with a little oil
(flip on both sides) You can add as many
things to the dough and serve with Curry
Goat.

Banana Porridge

Ingredients:

1 cup of milk
5 cups of water
1/2 cup of flour
3 fingers of green bananas
1/2 teaspoon of sugar, nutmeg,
-vanilla and salt, to taste

Directions:

Wash, peal and grate bananas. Add flour
and salt to grated bananas and mix well.

Beat the mixture with fork while adding
water till its smooth. Sweeten to taste
and add nutmeg and vanilla.

Pour mixture in boiling water, stirring
constantly to prevent from lumping stir
until mixture thickens. Continue cooking

Now add the milk, and let it simmer over
low heat. Cook for 30 minutes. Add sugar
and spices to taste.

Cornmeal Porridge

Ingredients:

1 pt of water
1 cup of milk
4 ozs. of cornmeal
1/2 teaspoon of salt
-salt and nutmeg to taste
-or (vanilla optional)
-sugar or fat free condensed
-milk for flavor

Directions:

Mix the cornmeal in 1/2 pt. of water. Bring
the remainder of water and milk to boil and
stir in cornmeal and salt.

Cook for at least 10 to 12 minutes. Sweeten
to taste, add nutmeg and vanilla. Serve hot.
Ideal for children.
