Picklese

Ingredients:

4 whole cloves
3 cups of vinegar
6 Scotch bonnet peppers
6 Scotch bonnet peppers
2 cups of shredded
-cabbage or thinly sliced
1/2 cup of shredded
-carrots or thinly sliced
1/4 cup of shredded
-onions or thinly sliced
1 teaspoon of salt to taste
8 to 10 peppercorns (optional)

Directions:

Snip off the stem of the peppers,
cut each into 4 pieces, and keep
the seeds.

Put hot peppers, cabbage, carrots,
onion, cloves, along with the salt
and peppercorn in a quart size jar.
Then add vinegar.

Next close the jar tightly and let
it sit for at least 24 to 48 hours
before serving. Serve with meat or
fish.

Tarte a l'oignon

Ingredients:

6 onions
2 ham slices
1/2 teaspoon of salt
1/2 teaspoon of sugar
-Parmesan grated cheese
4 tablespoons of butter
4 tablespoons of flower
1/3 cup of carnation milk
1/2 teaspoon black pepper
1 Baking pie dish

Directions:

First cut the ham into small pieces
then peel the onion and cut them in
small pieces. now add the 4 tbsp of
butter and melt in a pan.

Next cook the onions on medium low
stove top Now add the ham then and
slowly add the pepper, salt, sugar
and flour.

Now slowly add milk. Add the cheese
last. Pour the paste right into the
pie dish and bake at 350 F. for 30
minutes Finally, cool off for about
20 minutes. Serve with and griot.

30 minutes cooking time.
Yields 8 Servings
