Chicken Curry

Ingredients:

1 whole garlic
1 small hot pepper
2 medium size onions
2 tablespoons of oil
2 tablespoons of ground curry powder
3 pounds of chicken cut into small pieces
4 medium size potatoes, peeled and halved
1/2 tablespoons garam massala
1 piece of cinnamon stick

Preparation:

Grind garlic, 1 onion, and pepper Heat oil
in stew pan. Add mixture of ground garlic,
pepper and onion, garam massala and curry
powder.

Allow to fry on slow heat for about 3 to 4
minutes. Add the chicken and potatotes and
salt to taste.

Add the cinnamon stick. Cook on slow heat
for 15 to 20 minutes. Add one cup of water
and sprinkle one chipped onion.

Next bring to a boil for 20 minutes until
the potatoes are fully cooked.

Note: Curried beef or lamb may be prepared
in a similar manner.

Coconut Bread

Ingredients:

1 egg
3/4 cup of milk
1 pound of flour
6 ounces of sugar
3/4 cup coconut water
1 small grated coconut
1/2 tablespoon of salt
1/4 pound of margarine
3 teaspoons baking powder
1 teaspoon vanilla extract
6 ounces of local dried fruit
-(or raisins)

Directions:

First sift together the dry ingredients
add sugar, beaten egg with milk, melted
shortening, and extract.

Next stir in the grated coconut and the
dried fruits, (floured if used).

Now blend the ingredients together well.
Knead slightly on a floured board.

Shape into loaves then put in a greased
loaf pan of two thirds full.

Finally, dust with the fine sugar, bake
right in a moderate preheated hot oven.

Makes 2 loaves

Corn Chowder

Ingredients:

1 cup of milk
-salt to taste
2 cups of water
1 tomato (sliced)
1/4 chicken breast
2 cups of corn kernels
1/4 tablespoon paprika
1 sweet pepper (sliced)
1 large onion (sliced)
4 large potatoes, cubed
6 large soda biscuits
-(crackers)

Preparation:

Cut the chicken breast in slices, and
fry until crisp and lightly browned.
Add the potatoes and water. Cook until
the potatoes are tender.

In a large bowl crumble the biscuits.
and add the milk to biscuits and leave
to soak.

Add the soaked biscuits, milk and corn
to the cooked potatoes along with the
chicken. Add salt and the paprika.

Finally, bring mixture to a boil then
add the tomato and pepper. Remove from
heat and serve.

Cornmeal Muffins

Ingredients:

1 egg
1 pound of flour
3/4 cup of cornmeal
-water or milk to mix
2 tablespoons of sugar
2 teaspoons baking powder
4 tablespoons of shortening
-pinch of salt to taste

Preparation:

Melt the shortening then cool off.
Sift together the flour, cornmeal,
baking powder and salt.

Beat eggs well, mix together with
the sugar and the shortening, eggs
along with the sifted flour.

Add enough of the milk to mix to
a stiff batter. Now 1/2 fill the
greased muffin pans.

Finally, bake in a moderately hot
preheated oven for 20 minutes.
