"Bolo di Pan" (bread pudding)

Ingredients:

4 beaten eggs
3 cups of milk
2 cups sof ugar
-1/4 teaspoon of salt
1 teaspoon of vanilla
1-1/2 teaspoons of cinnamon
1 loaf of bread (20 slices)
-1/2 cup of butter or margarine
-1/2 cup of raisins or cut up prunes
-1/4 cup of crystallized chopped fruit
4 tablespoons orange marmalade (optional)

Directions:

Soak the bread in the milk and mash with
fork. Add the remaining ingredients then
mix well.

In either a buttered form or two 8" pans,
bake at 350 degrees F. for 1 hour or until firm
and nice in color.

Serving Size: 12 (Can be divided in half)

"Quesillo" (Flan)

Ingredients:

12 eggs
4 cups of milk
3 cups of sugar
2 teaspoons of vanilla
-a pinch of salt to taste

Directions:

Caramelize 1 cup sugar over low flame till
golden brown and cover bottom and sides of
mold with it. Mix milk and remaining sugar
and scald.

Cool lightly, add to slightly beaten eggs,
which are blended so that yolks and whites
are well mixed. Add salt, vanilla. Strain.
Pour into caramelized mold.

Place mold in a shallow pan of water then
bake at 350 degrees F. for about 1-1/2 hours
or use a double broiler on the stove over
the medium heat. Cool, and place into the
refrigerator. Invert into a shallow bowl.

"Pan Dushi" (Curacao new year's cake)

Ingredients:

1 cup of milk
-1/4 cup of brandy
2 cups of sugar
-1/2 cup of butter
4 cups of flour
-1/2 cup of raisins
-1/4 teaspoon of salt
-1/2 teaspoon of nutmeg
-1/2 cup of glazed fruit
2 teaspoons of cinnamon
5 eggs, slightly beaten
3 teaspoons of baking powder

Directions:

Dissolve the sugar in milk, add butter and
beat. Add the eggs and beat until its well
incorporated. Add flour with baking powder
along with salt and spices.

Lastly blend in the fruit and brandy. Bake
in a tube form pan at 350 degrees F for 45 minutes
to 1 hour.

"Appeltaart" (Apple tart)

INGREDIENTS FOR DOUGH:

1 egg yolk
-3/4 cup of butter
2-1/4 cups of flour
-3/4 cup of sugar (brown)
-a pinch of salt to taste
2 small bags of vanilla (sugar)

First knead the butter, sugar, flour, salt
and the yolk together to form the dough.

Use 2/3 of the dough to line a 10 inch pie
plate. Pinch the edges of the rim to make a
crimped crust.

INGREDIENTS FOR FILLING:

-cup of sugar
2 teaspoons of cinnamon
1 slightly beaten egg white
1/3 cup of currants or raisins
4 to 5 tart, peeled sliced apples
-(big and sour) -1/4

Next mix together the apples and sugar with
the cinnamon and currants together. Arrange
slices in the crust.

Roll the remaining dough in strips and criss
-cross to decorate the top.

brush with the beaten egg white. Preheat the
oven to 450 degrees F.

Before placing pie in, reduce the temperature
to 350 degrees F. and bake for 45 minutes to 1
hour.
