"Peanut Sauce"

Ingredients:

-1/4 cup of water
-1/2 teaspoon of cumin
-1/2 cup of peanut butter
-1/2 teaspoon of onion powder
-1/2 teaspoon of curry powder
-1/2 teaspoon of garlic butter
-1/2 teaspoon of hot pepper (sambal)
5 to 6 tablespoons of Ketchap Manis
-salt and pepper to taste

Directions:

Place peanut butter and water in saucepan
and stir over gentle heat until its mixed.
Remove from the heat and add all the other
ingredients.

Note: The sauce should be a thick, pouring
consistency. Adjust seasonings necessary.

"Appel na dushi" (glazed apples)

Instructions:

10 cloves
2 cinnamon sticks
-lime or lemon juice
-few drops of red food coloring
6 medium sized apples 1 cup sugar

Directions:

First pare and core the apples, rub well
with lime or lemon juice. Boil the apple
peels with sufficient water to cover and
cook for 15 minutes.

Now strain this liquid and measure 1 cup,
add sugar, food coloring and spices, boil
until sugar is dissolved.

Next add apples, coating them with syrup.
Cook on medium heat, turn the apples often
until they are glazed. Add a little bit of
water.

Note: you may use peers instead of apples.
if necessary.

Serves 6 People

"Carrot Cake"

Ingredients:

-1/4 cup of oil
2 cups of flour
1 cup of raisins
1-1/2 cups of sugar
-1/2 cup plain yogurt
-1/2 teaspoon of salt
-1/4 cup of warm water
-1/2 teaspoon of nutmeg
-1/2 teaspoon of cloves
2 teaspoons of cinnamon
1-1/2 cups grated raw carrots
1-1/2 teaspoons of baking soda

Directions:

Mix baking soda with water and set aside.
In a large bowl mix in the carrots along
with the yogurt. Stir in sugar, oil with
the spices.

Add flour, blend, then pour in baking soda
mixture and raisins. Bake in a greased and
floured pan at 325 degrees F for about 1 hour.

"Bolo di pampuna" (pumpkin pudding)

Ingredients:

4 eggs
-3/4 cup of milk
-3/4 cup of butter
2 cups of sugar
-1/2 teaspoon of salt
1 cup of sifted flour
1 teaspoon of vanilla
1 teaspoon of cinnamon
2 teaspoons baking powder
4 cups boiled and mashed pumpkin

Directions:

Cream the butter and sugar. Add the eggs 1 at
a time. Mix pumpkin with vanilla and cinnamon
add to the creamed mixture.

Next blend into flour, salt with baking powder.
Taste to see if more of the cinnamon is needed.
Pour in a well greased 2 quart ring form.

Bake at 350 degrees F for 1-1/2 hours or until knife comes
out clean. Cool completely onto the rack before
removing from pan.

Serves 10 to 12.
