"Bolo di mahishi" (corn pudding)

Ingredients:

-margarine
-bread crumbs
2 eggs, well beaten
1 teaspoon of sugar
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 can (1 lb.) creamed corn

Directions:

First mix the first 5 ingredients then
place right into a loaf pan.

Top with very fine breadcrumbs and dot
with the margarine. Bake at 350 F. for
1 hour or until done.

"White sauce"

Ingredients:

2 cups of milk
1/3 teaspoon of salt
1/8 teaspoon of pepper
11/2 cups of cheese (grated)
1/4 tablespoons of butter
4 tablespoons of flour

Directions:

Over low heat melt the butter in a saucepan.
Mix in flour and cook slowly for 2 to 3 min.
stirring constantly.

Gradually pour in milk then stir vigorously
to thoroughly mix. Cook for 3 minutes until
sauce is smooth and thick.

If there is any lumps strain and add cheese,
salt and pepper, Heat only until the cheese
melts right into the sauce.

Finally, pour the sauce over cauliflower to
cover completely. Bake at 250 F. for 35- 45
45 minutes or until top is a slightly brown
color.

"Ponche Crema" (Caribbean Eggnog)

Ingredients:

4 egg yolks beaten
1 can of condensed milk
1 cup of brandy or rum
1 teaspoon of vanilla

Instructions For Preparation:

First, place the egg yolks, condensed
milk, brandy or rum and a teaspoon of
vanilla.

Next in a bowl beat together very well
and pour right into a bottle. keep it
refrigerated.

"Ketchap Manis"

Ingredients:

7 tbsp of molasses (dark)
1/2 tsp of ground coriander
1 cup of soy sauce (Japanese)
1 tsp of fresh ginger (grated)
1/2 tsp of fresh ground pepper
1 cup of dark brown sugar
-(packed firmly)
1 cup of water

Directions:

In a 2-quart saucepan combine the
sugar with the water. Over medium
heat, bring to a simmer, stirring
until the sugar dissolves.

Increase heat to high and continue
cooking till the syrup reaches 200
degrees F. on a candy thermometer,
about 5 minutes.

Reduce the heat to low and stir in
the remaining ingredients, simmer 3
minutes.

Note: This will keep 2 to 3 months
tightly covered and stored in the
refrigerator.

Makes about 3 cups.
