1 can sweetened condensed milk
2 egg yolks
1 1/4 cups freshly squeezed Cayman lime juice
1″ x 9″ Graham Cracker pie crust
1/2 cup of egg whites
1/2 cup granulated sugar
Place the condensed milk, egg yolks and lime juice into a non-reactive bowl, combine thoroughly and strain. Pour mixture into pie crust and bake at 300° F for approximately 8 minutes or until set.
Remove from oven and set aside to cool.
Combine eggs and sugar and whisk with an electric mixer on a high speed until stiff. Fill into piping bags and pipe on top of pie.
Isn’t there a step missing?
Don’t you have to bake the pie once more? The egg whites and sugar would be a meringue that would need to be cooked, too.
