Somalia: Crabmeat Stew

Ingredients:

200 g onions, finely chopped
1 tsp curry powder
1 tsp ginger
1 tsp salt
1 tsp red chilli flakes
60 ml groundnut oil
450 g tomatoes, cut into small wedges

Method:

In a large, heavy saucepan add the oil. Heat then add
the onions, curry powder, ginger, salt and chilli
flakes.

Fry until the onions are soft then add the tomatoes.
Simmer until the tomatoes begin to cook then add the
crabmeat.

Cook gently for 10 minutes then serve over boiled rice.

Samoa: Banana Poi

Ingredients:

1 lb Bananas
1 tsp Vanilla
1 cup Halfnhalf milk or 1/2 can coconut milk
1 Lemon
Ice
Sugar to taste

Method:

Mash bananas (preferably with hands) until smooth. Mix in vanilla
and milk. Add sugar to taste.

Peel lemon and add the peels to the mixture and stir. The lemon
peel will add a faint lemon flavor. Pour over ice and serve.
