Bread Pudding

Ingredients:

2 1/2 cups of milk
1/4 cup of cherries
1/2 teaspoon of spice
1/2 cup of brown sugar
2 eggs (beaten slightly)
1/4 cup of seedless raisins
1/2 teaspoon of vanilla essence
4 slices of stale bread (cubed)

Directions:

In a mixing bowl add the milk and the eggs
and combine together. Pour the egg mixture
over the bread cubes, stir in the remaining
ingredients.

Pour into a round baking dish and place it
into a shallow pan. Put the hot water into
the pan until it is 1 inch deep.

Bake at 350 F. for about 45 min. or until a
skewer comes out clean.

Cassava Pone

Ingredients:

1/2 cup of milk
1 teaspoon of spice
1/2 teaspoon of salt
1/2 teaspoon of nutmeg
1/2 pound of margarine
1/2 pound of margarine
1/4 pound of shortening
1/4 pound of plain flour
1 3/4 pounds of brown sugar
1 pound of coconut (grated)
3 1/2 pounds of cassava flour
12 teaspoons of baking powder
1 tablespoon of mixed essence
1/4 pound of raisins (seedless)

Directions:

Place the cherries on a board and cut in
small pieces and then combine every thing
except margarine, milk and the shortening.

Next in a mixing bowl with a large wooden
spoon can be used. Melt the margarine and
the shortening and pour into the mixture
along with the milk and mix.

Continue mixing with the addition of small
quantities of water until a moist mixture
is achieved. Spoon the mixture into five 8
by 4 baking pans.

Flatten the tops slightly with the back of
a moist spoon and sprinkle some sugar on
them.

Bake at 300 degrees F. for 60 minutes or
until a skewer comes out clean.

Peas n Rice

Ingredients:

1 cup of rice
2 cups of water
1/2 teaspoon of thyme
1 chopped bell pepper
2 strips bacon fry and crumble
1 chopped onion cook in bacon fat
1/2 teaspoon salt and black pepper
1 cup pigeon peas boil until tender
1 tomato, skinned, seeded, chopped
-or 1 tablespoon tomato paste.

Directions:

First bring all of the above ingredients
except the rice to a boil. Add rice and
simmer until cooked.

Cherry Juicep> Ingredients:

1 pound of bajan cherries
4 to 5 heaped tablespoons of
-sugar

Directions:

First pull the stems off the cherries
and place the cherries into a blender
with a little water

Next liquefy the cherries and strain
right into a jug.

Note: The straining process takes a
while. Add the sugar and top up with
water and stir.
