Baked Fish

Ingredients:

1/4 teaspoon of thyme
1 large onion, chopped
3 cups of bread crumbs
-salt & pepper to taste
2 tablespoons of tomato paste
1 (3 to 4 pounds) snapper fillet
1/2 pound of butter, melted

Directions:

Preheat the oven to 350 degrees. Put
the snapper fillet in a well greased
shallow baking pan.

Baste fish with 1/4 pound of melted
butter. Season with the thyme, salt
and pepper and Bake for at least 1
hour.

Next melt the remaining butter into
a large skillet, add the remaining
ingredients and cook for 15 minutes.

Spread sauce over the fish. Return
to oven and bake 20 minutes longer.

Grilled Red Snapper (fish)

Ingredients:

1/4 lb. of butter
2 onions, chopped
2 cloves garlic, minced
3 Tbsp, of spicy mustard
-salt and pepper to taste
8 Portions of Fish fillets
-juice from 2 limes or lemons

Directions:

First melt the butter in a sauce
pan. Add onions, saute till they
are clear, add garlic, lemon and
lime juice, mustard, salt and
pepper.

Put the fish fillets on the grill
turning frequently while brushing
liberally with sauce.

Note: Fish is done when the inner
most area is white and flaky. You
can use this sauce with any firm
fish fillet.

Preparation Time: 15 Minutes
Cooking Time: 10 to 15 Minutes

Johnny Cake

Ingredients:

1 egg, beaten
1 cup of milk
1 cup of flour
1/3 cup of sugar
3/4 cup of cornmeal
3/4 teaspoon of salt
5 teaspoons of baking powder
2 tablespoons vegetable oil

Directions:

Preheat the oven to 350 F. Mix all of
the dry ingredients together. Add egg,
milk and oil to dry mixture and blend
well.

Pour into 8 inch square pan. Bake for
30 to 35 minutes until slightly brown
on top. Serve hot or cold with butter,
honey or preserves. Yum

BARBADOS:

Breadfruit Roll with Fish Filling

Ingredients:

1 egg beaten
-1/4 cup of milk
1 large onion
2 blades of chive
1 -1/2 teaspoon of salt
1 celery stick (blade)
2 tablespoons of flour
1 tablespoon of margarine
1 breadfruit (large)
1 pound cooked flaked fish
-pepper and salt for flavor
1 green and red sweet pepper
-water for steaming/ boiling
-filling

Directions:

Crush the breadfruit before you start
to cook. Now add the beaten egg. Make
into ball as pastry.

Instructions For Filling:

In a pan melt the margarine, now add
the chopped seasonings. Sauté for 2
minutes.

Stir in the flour, add milk and cook
until nice and smooth. Add the fish,
and adjust the flavor, allow to cool.

Roll out pastry 16 x 16 on waxpaper.
Spread on the filling, reserving one
inch at each side. Roll using the wax
paper as protection.

Now place on the greased cookie sheet
and brush with beaten egg. Bake until
brown. Slice and serve.
