Tuna Steaks and Salsa

Ingredients:

1 diced tomato
1 quartered lime
1 diced small Onion
1/2 diced small
-green pepper
4 ounces cheddar cheese
-finely grated
1/4 teaspoon each peppe
-and salt
4 Tuna Steaks
1/4 teaspoon soy sauce
-mixed with olive oil

Directions:

Brush the steaks with the oil mixture
and broil 2 to 4 minutes for the first
side and for the other side for 1 to 2
minutes.

Finally, on top of the steaks sprinkle
with the cheese and salsa then finally
garnish with wedges of lime.

Conch Salad

Ingredients:

3 limes
1 onion
1 tomato
2 fresh conch
2 bird peppers
1 green pepper
-salt to taste

Directions:

Go down to the dock where they sell fresh
Conch in the shell. Purchase 2 live Conch
and have them cleaned.

When you get home, rub the Conch with salt
or lime then rinse. Cut out long "vein" in
flat part, discard.

Mince the red and black "lip". Cut the meat
from the hard "foot".

Dice the Conch into 1/4 inch cubes, put into
a glass bowl then cover with juice of 2 to 3
limes and salt to taste.

Mash 1 to 3 bird peppers on the side of the
bowl with back of spoon, mix in while Conch
marinates, dice one medium onion, one large
tomato and one green pepper.

Add to salad, mix well. Refrigerate for one
hour. serve with the soft white bread along
with the butter. Enjoy!

Serves 2 Persons

Crab 'n Rice

Ingredients:

6 to 8 crabs
1 large onion
2 cups of rice
1 Sm Sweet Pepper (optional)
3 to 4 tablespoons tomato paste
-salt, pepper, paprika, thyme to taste
1 cup of fresh (boiled until tender)
-pigeon peas
Directions:

First you must wash the crab, remove the
biters then put aside, separate the crab
bodies from backs, scoop out crab fat in
a bowl

Now break the bodies into sections, beat
bodies and biters with coach beater. Set
aside.

Peal and chop the onion, along with the
sweet pepper Next Fry until tender Stir
in the tomato paste, crab fat including
the seasonings. Simmer for about 5 min
Add 3 cups of water, bring to a boil.

Add the peas with the crab, bring it to
a full boil for 5 minutes. Add the rice
and bring back to a boil.

Next turn to simmer, cover the pot until
water is almost gone. Finally, cook rice
on low heat until its tender.

Peas & Rice

Ingredients:

1 cup of rice
2 cups of water
1 small onion minced
1 green pepper diced
1/4 cup of bacon diced
1 to 8 ounces can pigeon peas
1/4 cup (2 ounces) tomato paste
-salt, black pepper, paprika and
-thyme to taste

Directions:

Fry the bacon until crisp. Now add the
green pepper and onion to the pan and
cook until onion is clear.

Add the water, peas, tomato paste, salt,
black pepper, paprika, thyme and rice.

Now cover the pot with a tight fitting
lid and simmer until all of the water
has been obsorbed.
