Coconut/Pecan Sweet Potatoes

Ingredients:

1/4 teaspoon coconut extract
-or Flavoring
1/4 teaspoon of vanilla
-extract
2 pounds of peeled sweet
-potatoes shredded
1/3 cup of brown sugar
1/4 cup of melted butter
1/4 cup of toasted pecans
-broken up in pieces
1/4 teaspoon of cinnamon

Instructions For Preparation:

In a large pot combine all but the coconut
and vanilla simmer on low for about 3 to 4
hours. Check for doneness by consistency.

Add the coconut and vanilla when finished
simmering prior to serving, mix very well.

Pineapple Cole Slaw

Ingredients:

1 teaspoon of sugar
3 slices of pineapple
1 teaspoon of salt
1/4 cup of vinegar
1 cups of shredded carrot
1/2 cup of diced apple
3 cups of shredded cabbage
2 tablespoons of green pepper
-(chopped)

Directions:

In a bowl add the apple, green pepper,
sugar, salt, carrots, and vinegar, mix
together and use the pineapple and the
shredded carrots for topping.

30 minutes of cooking time.

Bahama Mama

Ingredients:

1/2 oz. of 151 rum
1/2 oz. of dark rum
4 oz. pineapple juice
1/2 oz. coffee liqueur
1/2 oz. coconut liqueur
1/4 oz. juiec of a lemon

Instructions For Preparation:

First stir together all the ingredients
with the ice then strain into a chilled
tumbler filled with ice.

Finally, garnish the drink with a cherry
or strawberry.

Makes 2 Servings

Lobster Curry

Ingredients:

1 onion
-salt to taste
1 cup of milk
-juice from 1 lemon
3 oz. of butter
2 tablespoons curry powder
-meat from 1 lobster
-(about 3/4 cup to 1 cup)
1 tablespoon flour

Directions:

In a pan add the butter and fry the
sliced onions. Mix the curry, flour
and salt, with the fried onions.

Now on low heat add the milk and let
it boil for an hour. If its dry add
more milk.

Finally, add the cut lobster meat and
the lemon, for a half an hour simmer.
