Papaya Pie

Ingredients:

4 egg Whites
-a pinch of cinnamon
4 tablespoons of flour
4 tablespoons of sugar
3 Ripe medium papayas
2 teaspoons of lime juice
1/2 teaspoon of lime zest
1 dash of orange extract
1 Sweet Medium Pre baked
-pie Shell

Directions:

Remove the seeds and coarsely mash the
Papayas. Now add the lime juice, zest,
cinnamon and the orange extract. Fold
in the sugar and flour.

Now beat the egg whites together until
they are stiff then fold into mixture.
Finally, bake for at least twenty five
minutes until the top is brown. Serve
warm or cold.

Pork Chops With Banana And Bacon

Ingredients:

2 large bananas
-juice of 1 lemon
3/4 tablespoon of cumin
-salt and pepper to taste
2 tablespoons softened butter
4 pork chops, about 1 inch thick
6 strips of bacon beer (optional)

Method:

First combine the butter, the Pepper
and salt with the cumin. Now Rub the
mixture into both sides of the meat.

Now saute the bacon until some of the
fat has rendered. remove then drain.
Peel the bananas and cut into 1 1/4"
chunks.

Place the bananas on a dish & sprinkle
with lemon juice. Cut the bacon strips
into lengths just long enough to wrap
around each banana slice.

Next place the bananas on the skewers,
threading it through where bacon slice
overlaps. Place pork chops on a heated
grill, for at least 15 minutes turning
once.

Finally, turn the grill down to medium,
adding the bacon and bananas; grill for
another 10 minutes, turning both of the
meat and the bananas. For extra flavor,
baste with beer, while the meat cooks.

Yields 4 Servings

Bread Pudding

Ingredients:

2 eggs
2 cups of milk
-brown sugar to taste
1 teaspoon of vanilla essence
1/4 teaspoon of lemon/lime rind
4 to 8 slices of bread spread with
-margarine and cut into cubes.

Instructions For Preparation:

First grease the pudding dish, and place
the buttered bread cubes in a bowl, pour
the milk, sugar, rind and essence, fold
lightly.

Add beaten eggs, fold. Place half of the
mixture into a greased dish, spread with
your favourite dried fruits (including
the Antigua Black Pineapple.)

Next pour the remainder of the mixture in.
Put in a preheated oven 250 to 275 degrees
Bake until set.

Optional: Spread the top of bread pudding
mixture with your favourite jam, top off
with meringue and bake."

Ducuna

Ingredients:

1/2 cups of sugar
-a dash of all spice
2 1/2 cups of flour
2 sweet potatoes (large)
-dash cinnamon raisin (optional)

Preparations for making Ducuna. First grate
the sweet potatoes and add sugar. Leave for
a while it will spring water from mixture so
you do not have to add water at anytime.

Add spices and raisin, mix in the flour. You
may proceed to add a little bit of water, if
the mixture seems to be too watery add a bit
more flour.

Spoon some of mixture in the foil paper. You
maybe able to make about 5 individual Ducuna
from the above recipe.

Wrap the Ducuna and place right into boiling
water and boil for 45 minutes until they are
firm. It will be hot. Carefully unwrap and
enjoy.
